Coconut Overnight Oats

This is a perfect replacement to the regular boring oatmeal you would have in the morning. These overnight oats are light and fluffy and when topped with fresh fruit and honey, it’s a perfect breakfast!

*Servings: 2 -4

Ingredients:

•Oats:

-2 cups old fashion oats

-1 cup coconut milk (plain yogurt works too! I personally prefer drinkable plain yogurt for a lighter consistency)

-1 cup milk

-2 tablespoons of honey

•Toppings:

-fresh fruit (I use strawberries here because they are in season but feel free to use any fruit you have on hands! mango and blackberries make a delicious pair 🙂

-1 tablespoon of unsweetened shredded coconut

-1 teaspoon chia seeds (these are loaded with fiber and Omega-3 fatty acids!)

*Instructions:

  1. Into a container or a large bowl, combine both coconut milk (or yogurt) and  milk.
  2. Add in oats and honey, mix well.
  3. Refrigerate over night or at least 6 hours. They will be soft and fluffy after they are done soaking up the milk mixture.
  4. Serve with fruits, top with coconut and chia seeds, and drizzle with honey
